Backup Questions

Two issues regarding backups:
1. I'd like to have a backup of all the sites on the database so I
can restore if there is a failure. There looks like 2 options: "Manilla
Sites" and "Databases". If I just choose "Databases", is this
sufficient to get a full backup? I'm confused why there are 2 options.
2. I've had Manila Site and Database on for a few weeks as we get
ready to go. There are about 8 sites on the server and 2 have the
automatic backup enable. The Guest Databases\ops\backups 1.5 gigs!
This seems big, I have no where near that much data in the system and
I'm concerned that once we launch, it won't be long that it won't fit on
the machine. I was thinking we could delete the old files, but read
that the backups were incremental (another puzzler why it is so big) so
thought this might break something.
