1) You'll have a full backup of all the sites if you enable the Guest
Databases backup option. The Manila site backups is just an optional extra
backup for specific Manila sites on the server.
2) You'll want to periodically delete old backups or move them to another
server/media from the /Guest Databases/ops/backups folder.

Two issues regarding backups:
1. I'd like to have a backup of all the sites on the database so I can
restore if there is a failure. There looks like 2 options: "Manilla Sites"
and "Databases". If I just choose "Databases", is this sufficient to get a
full backup? I'm confused why there are 2 options.
2. I've had Manila Site and Database on for a few weeks as we get ready
to go. There are about 8 sites on the server and 2 have the automatic
backup enable. The Guest Databases\ops\backups 1.5 gigs! This seems big,
I have no where near that much data in the system and I'm concerned that
once we launch, it won't be long that it won't fit on the machine. I was
thinking we could delete the old files, but read that the backups were
incremental (another puzzler why it is so big) so thought this might break
something.
